Chef Brentfield Lettsome grew up in the British Virgin Islands where his experiences and cooking with his Mom cultured his philosophy as a chef; as he changes the landscape of cooking.
Chef Brent's career included tenures at some of the most prestigious restaurants and hotels in the United States and the Caribbean. The Fat Monk , Penelope's Restaurant and the Untitled at the Whitney Museum in New York City, Tropical Fusion Beach Bar and Grill, Sebastian's on the Beach, Treasure Isle Hotel , Camdem Gourmet Market and YCCS Marina in the BVI.
Chef Brent proudly represented the British Virgin Islands at the Caribbean Hotel & Tourism Association Competition in Miami, BVI Food Fete, Citi Taste of Tennis and the BVI Virtual Showcase. He has also been featured in Essence Magazine including sharing his 'Coconut Curry Fish Mousse on a Plantain wheel' recipe and recently made the cover of Virgin Islands Life & Style Magazine.
